Our aim with Fancy Pants is to make a sparkling red that is fresher and more elegant than the traditional full-throttle Australian style; we like to think it tastes as a French red Champagne might, were such a wine to exist. With an attractive deep ruby colour and a nose of crisp, fresh, mixed red fruits, including redcurrants, cherries, brambles and blueberries, dusted with just a hint of icing sugar, Fancy Pants leads you into its vibrant palate crammed with the same kinds of fruits, and with some delicious darker fruit too woven into the fabric. The vintage port provides a hint of richness, but throughout Fancy Pants remains humming with a zinging vitality.  And what to drink it with? And when? As to when, it certainly makes a marvellous aperitif, but is also remarkably versatile, which brings us to what.

Try it with turkey and cranberry sauce, fegato alla Veneziana (calves’ liver and onions!), or veal chops in a Marsala sauce.
