Description

After 14 days on skins with daily pumpovers our Cabernet blends were put straight into French oak barrels for natural malolactic fermentation. The wine remained in barrel for 2 years before final blending and bottling.
As typical with Clare Cabernet, our 2006 Cabernet is deep and dark in colour with a lifted violet and herbal nose. The palate is rich, full and complex with blackcurrant, licorice and subtle fruit cake characters. The finish is long and satisfying but very tight and refinded which will reward with cellaring.
We thought it would be hard to beat our Cabernet from the outstanding 2005 vintage but this is close. You be the judge!
