This unique venture saw the production of a single red wine in the portfolio, using the five noble Bordeaux varieties and utilizing 100% Clare Valley fruit from various established growers. MAX V became the first wine in Australia to implement an innovative barrel fermenting system, called ‘Vinification Integrale’ which allows the grapes to be crushed and inserted into the barrel for the entire primary fermentation, maceration and the more usual secondary fermentation.
